Residential Nutritional Chef

Reports To: Executive Chef

Summary of Position:

As a Residential Nutritional Chef, you will be responsible for maintaining the highest quality of food preparation and presentation. You will ensure the correct maintenance and use of equipment, as well as monitor cleanliness and sanitation in food preparation areas. Additionally, you will be in charge of ordering necessary food supplies and practicing safe work habits to avoid any injuries.

Responsibilities:

1. Equipment Maintenance: Maintain complete knowledge of correct maintenance and use of equipment.
2. Sanitation and Organization: Monitor and maintain cleanliness, sanitation, and organization of food preparation areas.
3. Food Preparation: Prepare, cook, and serve food delegated as your responsibility, ensuring the highest possible quality and adherence to food preparation and presentation standards.
4. Daily and Weekly Procedures: Carry out daily and weekly procedures, including temperature checks, food labeling/dating, and storage.
5. Food Supplies Management: Assist as directed in ordering necessary food supplies.
6. Safe Work Habits: Practice safe work habits at all times to avoid injury to yourself and others.
7. Hazard Reporting: Immediately report all suspicious occurrences and hazardous conditions.
8. Hot and Cold Line Stations: Follow all specifications and properly set up hot and cold line stations.
9. Adherence to Policies: Familiarize yourself with Kenyan, OSHA, FTO, HACCP, and other Company – Health & Safety Policies and ensure your areas promote and comply with them.
10. Hazard Rectification: Take responsibility to rectify hazardous situations and report major concerns to the executive chef or designated department.
11. Safety Procedures: Be familiar with property safety, first aid, fire, and emergency procedures, and actively enforce them in your area of responsibility.
12. Key Control: Ensure that the department key control procedures are strictly adhered to.
13. Safe Food Storage: Ensure that all food items are stored safely.
14. Environmental Initiatives: Adhere to environmental initiatives in the workplace and participate in community activities and programs.
15. Garbage Disposal: Ensure environmentally friendly disposal and recycling of garbage is carried out properly under the guidelines set by management, the City Council, and the Kenyan Government.

Qualifications/Training:

• Diploma graduate of a culinary school.
• Nutritional Knowledge and two years’ practice in the same field.
• Previous experience in the hospitality industry, preferably in the kitchen.
• Knowledge of proper food handling.
