Overview

The role of F&B Outlets Manager at Villa Rosa Kempinski Nairobi is a pivotal position responsible for delivering an exceptional guest experience across all Food & Beverage (F&B) outlets. The successful candidate will lead a dedicated team, working closely with culinary experts to ensure that every service meets the high standards of the Kempinski brand. Key Responsibilities

Leadership and Team Management

  • Report to: Head of Department/Assistant Head of Department.
  • Supervise: Assistant Restaurant Managers, Outlet Managers, Restaurant Supervisors, Head Waiters/Waitresses, Waiters/Waitresses, Hosts/Hostesses, and Outlet Cashiers.
  • Set a positive example by adhering to the hotel’s dress code and Kempinski grooming standards. Always maintain a high standard of personal appearance and hygiene.
  • Provide professional and courteous service at all times and ensure that all employees of the assigned outlets follow your example.
  • Ensure that the place of work and surrounding area are kept clean and organized at all times.

Operational Excellence

  • Execute and demand the highest level of service and set-up standards from the team.
  • Have in-depth knowledge of all services and products offered by the hotel.
  • Thoroughly understand the concept of each outlet and ensure all employees are trained accordingly.
  • Lead by example in terms of service, product knowledge, and guidance that reflects the outlet’s concept.
  • Actively participate in menu design in collaboration with the culinary team. Organize tastings for daily dishes and new menus.
  • Stay informed about the local restaurant scene and gastronomic trends to maintain a competitive edge.

Financial Management

  • Efficiently manage the outlet’s costs and expenses while maintaining high-quality standards.
  • Drive top-line revenue and profit by implementing effective up-selling strategies for all items offered by the department.
  • Assist in preparing the outlet’s budget and conduct monthly inventory of operating supplies and equipment.

Guest Satisfaction

  • Monitor and constantly improve quality and guest satisfaction using tools such as the Kempinski Experience Survey.
  • Handle guest inquiries and complaints in a courteous and efficient manner, ensuring follow-up actions are taken.
  • Conduct daily pre-shift meetings to brief employees on preparation, guest profiles, service, and menu details.

Administrative Duties

  • Produce and present reports and analyses of the outlets’ performance during monthly meetings.
  • Implement a flexible work schedule based on business patterns and ensure effective payroll control.
  • Establish and maintain a pool of qualified and trained full-time and part-time employees in conjunction with the hotel’s Human Resources department.
  • Update the outlet’s operations manual annually in collaboration with the Assistant Head of Department.

Compliance and Safety

  • Ensure that opening and closing procedures established for the outlet are followed.
  • Report any incidents that require disciplinary actions immediately to the Head of Department.
  • Comply with all hotel management directives and respond to departmental changes as required.

Additional Responsibilities

  • Serve as the Food & Beverage Duty Manager in the absence of the Head of Department or Assistant Head of Department.
  • Assign responsibilities to subordinates, implementing a multi-tasking principle, and periodically check their performance.
  • Undertake additional tasks and secondary duties as needed to meet the business and hotel needs.

Skills, Knowledge, and Expertise

  • Experience: Minimum of 3 years in a similar role within a 4 or 5-star hotel.
  • Specialization: Italian restaurant experience is highly desirable.
  • Competencies: Strong wine knowledge, dynamic personality, and a proven track record in revenue reporting and tracking.
  • Communication: Excellent verbal and written communication skills.
