Job Summary

As the Executive Chef, you will be responsible for the overall operation of the kitchen. Your duties will include menu planning, food preparation, and supervision of kitchen staff to ensure that every meal served meets our high standards. You will also be tasked with maintaining kitchen hygiene, managing inventory, and working closely with other hotel departments to ensure a seamless dining experience for our guests.


Key Responsibilities

1. Operational Management

  • Initiate and Implement Standards: Develop and enforce kitchen operational standards and procedures to ensure smooth running of the department.
  • Promote Hygienic Processes: Ensure the food production environment is hygienic and free from contaminants.
  • Quality Standards: Maintain and deliver quality standards in compliance with health and safety regulations.

2. Staff Management

  • Staff Supervision: Manage the kitchen team including Sous Chef, Junior Sous Chef, Commis Chef, Stewards, Staff Cook, and Kitchen Coordinator.
  • Performance Management: Oversee staff performance and career growth, ensuring a motivated and efficient team.

3. Customer Satisfaction

  • Feedback Analysis: Analyze customer feedback reports to identify areas for improvement and implement necessary changes.
  • Menu Review: Periodically review and update the menu to meet customer expectations and incorporate new trends.

4. Financial Management

  • Budget Management: Manage dining reservations, menu pricing, and special packages within budget constraints.

Key Performance Indicators

  • Customer Satisfaction: Measured through customer feedback and reviews.
  • Quality Standards: Consistency in delivering high-quality meals.
  • Menu Innovation: Introduction of new and exciting menu items.

Qualifications and Experience

  • Education: University Degree or Diploma in Hotel and Hospitality Management.
  • Certification: Certificate in Food Production.
  • Experience: Minimum of 5 years in the hotel industry in a similar role.
  • Cuisine Expertise: Experience with a variety of cuisines.
  • Skills: Basic skills in firefighting and first aid, knowledge in Quality Management Systems (QMS) and Food Safety Management Systems (FSMS).
