Key Responsibilities
1. Food Preparation and Presentation
- Prepare and assemble cold appetizers, salads, sandwiches, dressings, pâtés, and charcuterie.
- Ensure the plating and presentation of cold dishes are visually appealing and meet high standards.
- Innovate and contribute creative ideas to the menu for cold items.
2. Inventory and Stock Management
- Monitor and manage inventory of ingredients required for cold dishes.
- Ensure proper storage of perishables to maintain freshness.
- Minimize food waste through effective stock rotation and portion control.
3. Compliance and Hygiene
- Adhere to all food safety and hygiene regulations, including HACCP standards.
- Maintain the cleanliness and organization of the cold kitchen station.
- Perform regular cleaning and sanitization of equipment and tools used.
4. Team Collaboration
- Collaborate with the Executive Chef, Sous Chef, and other kitchen staff to coordinate kitchen operations.
- Assist in the training and mentoring of junior staff and trainees in cold kitchen techniques.
5. Customer Satisfaction
- Ensure timely preparation of dishes while maintaining high-quality standards.
- Incorporate customer feedback to enhance menu offerings.
Qualifications and Skills
Education
- Diploma or certificate in Culinary Arts or a related field.
Experience
- Minimum of 2 years of experience as a Cold Kitchen Chef or in a similar role within a reputable hospitality establishment.
Skills
- Expertise in cold kitchen techniques and food preparation.
- Creativity in presentation and menu development.
- Familiarity with HACCP and other food safety standards.
- Strong organizational and time management skills.
- Ability to work under pressure and meet tight deadlines.
Work Environment
- Requires standing for extended periods.
- Ability to lift and carry items weighing up to 20kg.
- Flexible work hours, including weekends and public holidays.
